Restaurants, school kitchens, etc. have grease traps to prevent oils, fats and grease from entering a septic or public wastewater collection system. Sizes range from a 5-50 gallon trap in the kitchen, to an outside holding tank called an “interceptor” ranging in capacity from 500-2000 gallons.

When a system is not maintained:
  • Grease moves into the sewer/septic system. 
  • Impacts on the environment are possible.
  • Can cause lines to be clogged, allowing grease to “back into” the facility.
  • Produce foul odors and possible business interruptions.
  • Require expensive line cleaning.
  • Create possible repercussions from municipalities and treatment plants.
