Restaurants, school kitchens, etc. have grease traps to prevent oils, fats and grease from entering a septic or public wastewater collection system. Sizes range from a 5-50 gallon trap in the kitchen, to an outside holding tank called an “interceptor” ranging in capacity from 500-2000 gallons.
When a system is not maintained:
- Grease moves into the sewer/septic system.
- Impacts on the environment are possible.
- Can cause lines to be clogged, allowing grease to “back into” the facility.
- Produce foul odors and possible business interruptions.
- Require expensive line cleaning.
- Create possible repercussions from municipalities and treatment plants.
